Turkey Chili with Corn & Chickpeas

Is delicious! It's relatively low in fat b/c of the turkey instead of beef - it's full of veggies and make a huge pot so you can eat it over and over again.

All you do is start with a package of ground turkey -- and cook it in a pot - preferably with a little bit of olive oil b/c the turkey is really low in fat it has a tendency to burn easily. Once that is cooked add in some corsely chopped veggies - I like onions and red peppers myself. Let that cook a little while - and season the mean and veggie combination with some salt, pepper, cumin, and maybe a little coriander. Once the veggies have loosened up a bit - add in two cans of chunked tomatoes, one can of corn (i like the canned corn over the frozen - though you could use any kind that you have on hand), one or two cans of chicken or turkey broth depending on how thick you like your chili, a can of chickpeas (garbonzo beans), and maybe a small can of tomato sauce. Then just let it cook until bubbly. When it starts to boil add in some spices (the ones you want to cook into everything) - maybe a little cayenne pepper or maybe some salt (depending on the tomoatoes you bought). Then just cook until finished. Flavor to taste about 10 minutes before it's done - and serve with chips and maybe some cheddar cheese on top. Easy as pie - tasty as pie too!

In a personal update - I've got absolutely nothing to do this weekend - and it's amazing. I really need to catch up on some household work, pitch some of the stuff that I don't need anymore, so in case this whole AZ thing works out I have already started the whole packing process. If it doesn't work out - at least I got rid of some stuff that I don't need anymore/organized my stuff.
